Pumpkin Dahl with Garlic Naan

Ingredients - serves 6

  • 1.5 cups yellow split peas (soaked in warm water for 1 hour - or overnight )

  • 3 carrots- diced

  • 2 brown onions - diced

  • 3 roma tomato - diced 

  • 1 thumb sized  ginger - finely chopped

  • 2 cloves garlic - finely chopped

  • 1/2 butternut pumpkin - diced

  • 2 tbsp olive oil

  • 1/2 can coconut milk (200ml)

  • 750ml water 


Spices:

  • 3 tbsp garam masala 

  • 2 tbsp cumin seeds

  • 1 tbsp cumin powder

  • 1 tbsp coriander seeds

  • 2 tbsp fennel seeds

  • 1 tsp turmeric powder

  • salt & pepper


Method

If you’re going to make your own Naan heres the recipe that I used https://www.bbcgoodfood.com/recipes/418615/easy-naan-bread I just added chopped garlic & parsley into the mix :)

  1. heat 1 tbsp of oil into a pan, add in the carrots, onion, garlic, ginger and fry on a low heat until it begins to soften

  2. once the carrot etc. has cooked, blend it in a food processor or blender until its a chunky purée texture

  3. heat 1 tbsp oil in a pot (large size), then add all spices and toast until fragrant 

  4. add in the puree and stir through the spices

  5. add all remaining ingredients (including strained yellow split peas) and simmer until everythings soft, stirring every 5 mins or so for around half an hour

  6. check the seasoning and make sure that theres enough salt
