Vegan Panna Cotta

Ingredients - makes 6 small or 4 regular sized 

Panna Cotta

  • 1 can full fat coconut milk (400mls)

  • 1 tsp vanilla

  • 1/4 cup white sugar (I never usually use this sugar but I wanted the traditional white look) 

  • 3/4 tsp agar powder - you can buy this at health food stores

Berry topping

  • 1 cup frozen mixed berries

  • 1 tbsp maple syrup

  • 1/2 tsp vanilla

  • pinch of salt

Method

  1. pour all Panna Cotta ingredients into a saucepan, simmer on low for 5-6 minutes and continuously stir with a spoon, then pour into moulds

  2. allow to cool

  3. put them in the fridge for a couple of hours to set  

  4. for the berry topping - put all berry ingredients into a saucepan and simmer until the berries have defrosted and softened, then cool in the fridge

  5. carefully remove the Panna Cotta from the moulds, serve with berries and enjoy!
