Roasted eggplant, cherry tomato chickpea pizza w/cheezey basil sauce


For the pizza:

•1 x eggplant

•1/3 red onion

•1/2 x punnet cherry tomatoes

•2 x cloves garlic

•1/2 x can chickpeas

•1 x pizza base (I was sneaky and got one from the Harris farm fresh bakery section... They are SO GOOD! 


Basil cashew sauce:

•1 lemon - juiced

•1 cup soaked cashews (90g)

•1 tsp salt

•1 tsp pepper

•2/3 bunch basil

•1/3 cup nutritional yeast

•1/2 cup olive oil

•1/2 cup water


1. Preheat the oven to 180degrees. Slice the eggplant, onion, garlic & tomatoes, drizzle with olive oil, salt, pepper and bake until slightly roasted (15-20min)

2. Remove the toppings from the oven (leave the oven on) and add onto the pizza base with the chickpeas, bake for around 10 mins until golden brown

3.blend all sauce ingredients until very smooth then pour as much as you want over the pizza:) if you have any left overs it's great on pasta or as a salad dressing
