Gado Gado

Earlier this year when I was in Bali I pretty much lived off of ‘gado gado' a traditional Indonesian dish…usually consisting of potatoes, veggies, tempeh or tofu, boiled egg with a satay kinda dressing. Super easy to make and seasonal to whatever you can get your hands on. Here is a vegan version and the sauce is killlllaaaa you should try it! x

Ingredients (serves two)

  • 1 purple sweet potato
  • 1 cup green beans
  • 1/4 purple cabbage
  • 1 carrot
  • 10 cherry tomatoes
  • 1/2 pack vermicelli rice noodles
  • 1/2 bunch coriander
  • 150g Tempeh
  • lime

  • 1/2 cup roasted (unsalted) peanuts
  • 1 tbsp sesame oil
  • 2 tbsp pure peanut butter
  • 1 red chilli
  • 1 knob ginger
  • 2 cloves ginger
  • 2 tbsp kecap manis (Indo sweet soy sauce)
  • 1 tbsp coconut nectar…or sweetener of choice
  • 1 tbsp tamarind paste
  • 1/3 cup water

  1. blanch the green beans, then boil potatoes & noodles and set aside
  2. fry tempeh in a pan and also set aside
  3. thinly slice the veggies and assemble in a bowl

For the sauce

  1. heat the sesame oil and add the ginger, garlic and half of the chopped chilli. lightly fry, then add the following ingredients and simmer for a few seconds, then remove from the heat
  2. once the sauce has slightly cooled down then add it to your blender and blend until all the roasted peanuts are smooth
  3. now you can assemble the dish together, add coriander lime, and the remaining chopped chilli, peanuts and pour the sauce over. Enjoy!
