Falafels & baba ganoush dressing

Falafel recipe (makes 20)

  • 2 cans chickpeas
  • 1 brown onion
  • 1 bunch parsley (flat leaf)
  • 1 tbsp cumin seeds
  • 2 tsp smokey paprika powder
  • 1 tsp chilli flakes
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 4 cloves garlic
  • 4 tbsp flour (which ever, I just used regular)
  • 1 tsp baking soda
  • oil for frying - I used coconut oil but this can be expensive 

1. fry off the spices for a minute or two until fragrant

2. chop the onion and parsley, then add it with the drained/washed chickpeas and remaining ingredients (except flour) into the food processor. 

3. once it has formed a dense mix transfer it into a bowl and stir through the flour

4. heat up the oil in a pan - enough to cover about 1cm of the bottom of it, fry a few falafels at a time until brown

Smoked eggplant dressing 

  • 2 medium eggplants
  • 2 cloves garlic
  • 1/4 cup lemon juice
  • salt, to taste
  • 1 tsp pepper
  • 1/2 cup tahini
  •  3 tbsp olive oil
  • 1 tsp cumin

1. poke the eggplants with a fork a few times then place in the oven on a baking tray at 180 degrees for 20 minutes, I also put the garlic in the oven with it until it was slightly roasted

2. place the baked eggplant directly onto your grill and char on every side until it starts to smell smokey

3. remove and throw away the skins

4. blend the eggplant with all of the ingredients until smooth, adding some water until it is dressing consistency.  If you want it more of the traditional Baba Ganoush dip style then just mix it in a bowl without water until combined :)
