Teriyaki Mushroom sushi bowl

Sushi Bowl with Teriyaki Mushrooms

 

I love sushi and I love lots of it so I thought why not throw all my fave sushi thangs in a bowl… lots of green stuff and sticky teriyaki mushrooms. YAAAASSS.

Ingredients (serves four)

For the bowl…

  • 2 1/2 cups sushi rice - or any rice you like 
  • 1 bag edamame beans
  • 1 telegraph cucumber
  • 1 avocado
  • 4 portobello mushrooms
  • seaweed salad -optional
  • For the teriyaki sauce…
  • 1 tsp fresh ginger
  • 1 bulb fresh garlic
  • 2 tbsp sesame oil
  • 3 tbsp mirin
  • 3 tbsp sake
  • 3 tbsp soy sauce 
  • 3 tbsp coconut nectar or honey
  • 1 chilli 
  • optional extras
  • sesame seeds
  • pickled ginger
  • tamari sauce

Method

  1. chop the ginger, garlic, chilli and mix with the remaining sauce ingredients. Remove the stalks from the mushrooms and marinate them in the sauce and set aside
  2. cook the rice, traditional sushi style here. Or as regular rice will be fine
  3. once the rice is cooked, boil the edamame beans, chop the cucumber & slice the avocado…place on top of rice
  4. now for the teriyaki mushrooms, fry a couple at a time in a pan for a few minutes on each side until tender then set aside. Add the remaining teriyaki marinade into the pan and simmer until reduced to a sticky sauce looking texture.
  5. Slice the mushrooms and then stir back through the sauce then serve. 楽しみます !
