Rocky Road

Rocky road is one of my all time Christmas favourites and I’m sure we all know the naughty version but heres my ‘nice’ and not-so-naughty version…made in the exact same way as regular Rocky Road but by simply changing some of the ingredients this recipe is gluten-free, and vegan. Chocolate is something I enjoy in good quality- usually dark and organic. Most of it was brought from my local beaches market, the turkish delight was and hand made by lovely the people from ‘Jaques Kitchen’. The nuts and coconut from ‘Honest To Goodness’. I love the personality that food has simply by knowing where your food is coming from!

Ingredients

  • 3 x 200g good quality dark chocolate
  • 250g turkish delight (gelatin free)
  • 1 cup roasted/salted cashews
  • 1 cup macadamia nuts
  • 1/3 cup toasted shredded coconut
  • Marshmallows: optional* these are the only thing I couldn't find a healthy-ish version of

Method

  1. Carefully melt the chocolate, avoid using the microwave as it not only destroys the quality it burns super easily
  2. once melted, add in the other ingredients and stir well 
  3. pour the mixture into a lined baking tray and place in the fridge for at least two hours until set, then cut and enjoy
