Roast Veg + lentil salad with cashew Aioli 🌱

Ingredients

  • •1/2 cauliflower
  • •4 carrots
  • •1 x can of lentils
  • •300g spinach (a few handfuls)
  • •1/2 bunch parsley
  • •1/2 avocado
  • •1 tbsp cumin seeds
  • •1 clove garlic
  • •Olive oil for roasting

Aioli dressing

  • •1 cup cashews soaked 
  • •1 clove garlic
  • •2 tbsp lemon juice
  • •1 tbsp apple cider vinegar 
  • •1/2 cup water
  • •1 cup olive oil
  • •Salt & pepper
  • •1 tbsp mustard

Method- for the salad

1. Cut the cauliflower and carrots, putting the garlic and cumin on the cauliflower. Salt pepper and Olive oil on both, roast until golden

2. Drain/wash the lentils

3. Allow the veggies to cool, mix all salad ingredients in a bowl

Aioli

1. Blend all ingredients in a blender then pour over the salad, store any left overs in a airtight container this will last for about a week in the fridge
