Orange & Coconut chia pudding
This is a great breakfast food or snack, really versatile and packed with antioxidants, protein & omega. Chia seeds swell to about 3 times their size when placed in liquid which makes them pretty much a sponge to whatever favour combo you want.
- 1/2 cup chia seeds
- 400g can coconut milk
- 1 tsp pure vanilla
- 2 tbsp coconut sryup
- 1 navel orange
- 1 pinch sea salt
- juice the orange, add it into a bowl
- add all of the remaining ingredients and mix well, set aside and mix every 5 or so minutes for the next 15 minutes. This stops them from sticking together and not swelling properly.
- put it in the fridge and allow to properly set for an hour
- pour into bowls and top with optional extras! I used coconut flakes, fresh orange, cacao granola, coconut syrup
