Orange & Coconut chia pudding


This is a great breakfast food or snack, really versatile and packed with antioxidants, protein & omega. Chia seeds swell to about 3 times their size when placed in liquid which makes them pretty much a sponge to whatever favour combo you want. 


  • 1/2 cup chia seeds
  • 400g can coconut milk
  • 1 tsp pure vanilla
  • 2 tbsp coconut sryup
  • 1 navel orange
  • 1 pinch sea salt 



  1. juice the orange, add it into a bowl
  2. add all of the remaining ingredients and mix well, set aside and mix every 5 or so minutes for the next 15 minutes. This stops them from sticking together and not swelling properly.
  3. put it in the fridge and allow to properly set for an hour
  4. pour into bowls and top with optional extras! I used coconut flakes, fresh orange, cacao granola, coconut syrup
