'Cheezy' stuffed mushrooms


Cheesey fried mushrooms! Button mushrooms stuffed with ‘Peace love and vegetables’ cashew & dill cheese and fried in Panko bread crumbs.... Beetroot hummus recipe coming soon! These are great little starters at a party or in the other picture shown you can use a portobello mushroom and have it in a burger :)

•400g button mushrooms
•1 cup Panko bread crumbs
•1/2 cup flour
•1 tsp salt
•1 tsp pepper
•1 cup almond milk
•1/2 jar dill cashew cheese (or cheese of your choice)
•oil for frying - I used coconut oil but this can be expensive


1. Remove the stalks from the mushrooms 

2. Toss in olive oil and roast in the oven at 170 degrees until soft and slightly golden

3. Stuff with the cheese

4.  In 3 seperate bowls put the flour/salt/pepper, almond milk, crumbs

5.  Put each mushroom in the flour, then the milk and then the crumbs

6. Heat 1 inch of oil in a pan until it's hot enough for frying all of the mushrooms until golden brown. Sit them on paper towel so they don't go soggy. These are best served straight after being cooked!
