Apple & Rhubarb Crumble

Apple + Rhubarb crumble

Crumble is one of my favourite desserts that my mum makes so I decided to do a ‘Kim Likes Food’ simple 3 step version of it using all organic, gluten-free, vegan (if you ditch the ice cream) ingredients…hope you like 

Ingredients •

5 apples (I used a mixture of green and red apples)

• small bunch of rhubarb

• ¼ tsp nutmeg

• ½ tsp cinnamon

• ½ cup coconut oil

• 1/3 cup pure maple syrup or honey

• ¼ cup coconut sugar

• 1 ½ cups gluten-free oats

• ¾ cup buckwheat flour

• 1 tsp pure vanilla extract

• 1/3 cup almond meal

• ¼ cup desiccated coconut

Method

*preheat oven to 180 degrees

1 Peel and chop the apples and add into a pot with the chopped rhubarb, nutmeg, cinnamon, vanilla extract, half of the coconut sugar and maple syrup and simmer for around 10 minutes until slightly soft. Add a dash of water if you think it needs more moisture.

2.  Once softened turn off the heat and add the remaining ingredients into your food processor or a mixing bowl and mix until combined into a firm crumble texture

3.  place the apple and rhubarb into your baking tray and evenly layer the crumble mixture on top. Place in the oven for approx 15 minutes or until golden brown then top with any of your favourite things or enjoy as is!
